A Better Way to Fight Obesity: New, Smarter Supermarkets | The Atlantic

I heard an interview on the radio today with Rupal Sanghvi, the founder of HealthxDesign (“Healthy By Design”), an initiative she launched in 2010 after a decade of work with the International Planned Parenthood Federation.

During her years in the field, Sanghvi observed numerous instances in which people developing public health solutions overlooked contextual factors that were contributing to the problem. In clinics, for example, she saw how redesigning ventilation systems, retrofitting inefficient lighting, or choosing different building materials could improve
treatment conditions and accessibility, but these things were rarely addressed. Likewise, in supermarkets, features like store layout and air temperature can influence purchasing decisions, but food access initiatives often stop short of such nuances of structural design.

“Standard supermarkets are designed to promote consumption of foods that are high in sugar and preservatives,” explains Sanghvi, “because those are the high-margin items that maximize profit.” According to current guidelines, in an average 10,000-square-foot supermarket, only 500 square feet must be utilized for fresh produce. If the U.S. spends millions to build supermarkets according to the conventional mold, she argues, we may see some improvement in public health simply as a result of increased access to food, but we stand to achieve far better outcomes if we first reconsider supermarket design itself.

This is a great point being made about how our environment has a huge impact on our behavior, as well as corporate responsibility for health and wellness, and not just profits. This seems especially important for food stores, and I’m glad to see somebody taking up the cause.

“The Economics of Happiness” documentary argues buying local will save the planet, ourselves

I am a huge fan of buying local (although I could be a lot better at it). This film makes an interesting argument that buying local is not only good for the environment and the local economy, but also connects us back to our spiritual sense of community.

Economic globalization has led to a massive expansion in the scale and power of big business and banking. It has also worsened nearly every problem we face: fundamentalism and ethnic conflict; climate chaos and species extinction; financial instability and unemployment. There are personal costs too. For the majority of people on the planet, life is becoming increasingly stressful. We have less time for friends and family and we face mounting pressures at work.

The Economics of Happiness describes a world moving simultaneously in two opposing directions. On the one hand, an unholy alliance of governments and big business continues to promote globalization and the consolidation of corporate power. At the same time, people all over the world are resisting those policies, demanding a re-regulation of trade and finance—and, far from the old institutions of power, they’re starting to forge a very different future. Communities are coming together to re-build more human scale, ecological economies based on a new paradigm – an economics of localization.

I have seen this same community/spirituality argument proposed as well with farmers in Hawaii trying to preserve traditional knowledge of taro planting, as well as other indigenous groups in South and Central America, and all over the world, so it is interesting to see this documentary maker make the argument on a larger scale, saying it can benefit all of us. I tend to agree.

I also like the idea of “grandmother universities,” which fit in well with the current trend of DIYers.

The Pantry – a community kitchen – to debut in Seattle

I’m so excited! This is awesome, woot!

You may have noticed how I’ve been really getting into the idea of community cooking and gardening as a way of creating not only better community, and a better environment for human beings to reside in, but also a better environment to live in physically, AND better, healthier food!

I am also a bit of a foodie, and really like how homemade has now also come to mean quality made, at least when it comes to cooking.

With that train of thought, one of my favorite food bloggers, Molly at Orangette, who also just happens to be part owner/operator of a restaurant Delancey in Seattle (where I just happen to currently reside), has announced some of her staff are opening up a community kitchen, called The Pantry at Delancey.

The Pantry is a community kitchen. It’s a space for hands-on cooking classes, family-style dinners, private events, and locally sourced catering. It’s located directly behind Delancey, on Alonzo Avenue NW, with a garden entrance designed by Fresh Digs. (There’s only mud and fence posts right now, but not for long.) There’ll be a 16-foot farm table, a cooking camp for kids in the summertime, and a small retail area stocked with independent food magazines, Weck canning jars, Delancey cookie dough and pizza dough, all our best stuff. Brandi and Olaiya already have a number of classes in development: a pizza-making class with Brandon, butchering and meat-curing with Russ Flint of Rainshadow Meats, a food writing course with Francis Lam, a City Chickens class with the good people of Stokesberry Farm, classes with Olaiya, classes with Brandi, a class or two with me – more than I can easily list here. And eventually, the Pantry will also make a lot of products for Delancey, products that we currently have to source elsewhere, like fresh mozzarella, pepperoni, bacon, pancetta, and salame. The projected opening date is sometime in late spring. Cross your fingers.

My first impression was “that’s dedication.” And an insight into a man who looooves peanuts and chocolate.

Urban farming in NYC

Just read about this cool example of urban farming: Eagle Street Rooftop Farm in good ol’ New York City.

From the site:

On the shoreline of the East River and with a sweeping view of the Manhattan skyline, Eagle Street Rooftop Farm is a 6,000 square foot green roof organic vegetable farm located atop a warehouse rooftop in Greenpoint, Brooklyn.During New York City’s growing season, the farmers at Eagle Street Rooftop Farm supply a community supported agriculture (CSA) program, an onsite farm market, and bicycle fresh produce to area restaurants.

In partnership with food education organization Growing Chefs, the rooftop farm hosts a range of farm-based educational and volunteer programs.

They also offer talks, events (today was their annual pie eating contest!), and other ways to engage with urban farming. If you live anywhere near there, go check it out; it is amazing to see a true working farm in action, and to see it done in an urban environment is really exciting. What a great way to learn about where your food comes from, and it’s healthier and fresher since it doesn’t have to travel as far or receive so many pesticides or preservatives for transport. And apparently these urban farms are now popping up all over the United States; check out some of the links below to read about other city’s urban farms. Eat up!

Mountain View to offer Ferndale Fries as pilot farm-to-school program – Local News – bellinghamherald.com

Where I live is incredibly fertile farmland, with lots of kids having to get up to milk cows, feed chickens, and so on before they catch the bus to school. It’s nice to see that connection to the land follow them into the classroom, and teach their classmates where their food comes from:

Students at Ferndale’s Mountain View Elementary School will soon be treated to freshly baked potatoes from northwest Washington as part of their school lunch.

On Jan. 27, the french fries and tater tots at the school are being exchanged for locally grown potato wedges, as part of a pilot farm-to-school project.

“This is something that’s good for the students and it’s good for the local farmers,” said Alex Singer, Ferndale School District’s Food Program director. “We have students who may not have ever had french fries that weren’t frozen before.”

Americans Falsely Believe Their Diet Is Healthy : Discovery News

So much for my New Year’s Resolution “Eat Healthier,”  and good reminder that it’s all relative; although, in my defense, my definition of healthy may be a little more stringent than the average American:

Nine in 10 Americans say their diet is healthy but only a quarter limit the amount of fat or sugar they eat, and two-thirds don’t eat enough fruit and vegetables, a poll published Tuesday found.

“Americans tend to give themselves high marks for healthy eating, but when we asked how many sugary drinks, fatty foods, and fruits and veggies they consumed, we found that their definition of healthy eating was questionable,” said Nancy Metcalf of Consumer Reports Health, which conducted the poll.

Of the 1,234 American adults polled, 89.7 percent said their diet was “somewhat” (52.6 percent), “very” (31.5 percent), or “extremely” healthy (5.6 percent).

Happy New Year! Time for New Year’s resolutions. Mine? To eat more healthy. And apparently so it is for these guys, as well as help the environment. Not to sound like my dad here, but I was doing this before it was cool!:

There’s a new shift in the politics of food, not quite a movement yet, more of an eco-culinary frisson. But it may have staying power; the signs and portents are there. Vegans, freegans, locavores — meet the invasivores.

Developing minds

Lots of cool news came out recently about human development, from chimps to little humans:

Wild chimps have been shown to understand fire and how it moves, and don’t freak out like other animals do. This is exciting because humans so far had been the only animals documented as keeping their cool around fire…for the most part.

Since we’re in the jungle, it’s once again been show that it’s good for kids to go roll around in the dirt; for one thing it correlates with lower heart disease when they’re older.

But back to brain wiring, kids who get intensive language training when they’re young, like reading, actually have their brains re-wired, in a good way.

New education research is also showing that kids may understand Math at a much earlier age than previously though, and there are ways that they can learn the concepts just as early as we try to teach them language.

One of the skills kids can develop is compartmentalization, which it turns out cavemen could also do much earlier than previously thought; for example, they made different, compartmentalized work stations in their camps, rather than spread everything around and sleep right next to the meat-processing spot.

Speaking of stone-age types, a study has come out that counters the idea that hunter-gatherers didn’t eat any grains at all.

All this data almost makes me want to grab some popcorn and pop it over a fire while playing math games. But not before I go work in my garden patch.
